ACKEE SOUFFLE 1/4 cup butter 4 well beaten egg yolks 1/4 cup flour 4 stiffly beaten egg whites 1/2 teaspoon salt but not dry 1 cup boiled ackees crushed to a cream or 1 cup canned ackee (drained) Preheat oven to 325/f. Melt butter in double boiler, add flour and salt. Blend. Add milk and cook, stirring constantly, until thick and smooth. Add ackee and stir until well blended. Gradually add sauce and egg yolks. Carefully fold in egg whites. Pour into ungreased Pyrex dish and set dish in shallow baking thin in hot water. Bake for 1 hour without opening oven door. | |||||||||||||||||||||||
